So, you have a customer who wants to be in multiple clubs? We have a few options to help accommodate this: 

Option 1: The easiest solution would be to create two profiles for them within Vincipia and put one under each club. When you go to process each club, they will automatically be there. The down side to this solution is that they would count as 2 members instead of 1 in your member count. 

Option 2: Keep track of these customers and move them before processing. Have them in one club to start, process that club, and then move them before processing the next club. This is not as simple of a solution, but it will keep your member count more accurate. 

Option 3: Create a private club for these customers (private so no one can put themselves in this club in VinSipp) and select all the bottles that would be in both clubs and process them together.
